What to know about paneer
Paneer is the counterexample that breaks the rule people carry about cheese. It is made by heating milk, splitting it with an acid such as lemon juice or vinegar, then pressing the curd, with no rennet, no starter culture and no ageing, which is why it never melts and why it is the default cheese in vegetarian Indian cooking. Fresh does not mean gentle, though, and the grades split in a way worth knowing. Lactose grades moderate, higher than a hard cured cheese, because paneer keeps milk sugar that ageing and long fermentation would otherwise remove. Dairy protein grades very high, the top of our scale, since paneer is essentially pressed casein and that is what holds the cube together in a curry. Histamine, histamine liberation and tyramine all grade moderate, comfortably below the aged cheeses we grade very high but not the clean slate that unaged suggests. Everything else is genuinely clear: gluten, salicylate, oxalate, nickel, sulfite, nitrite, free glutamate and nightshade all grade safe.
Watch for
- Fresh cheese carries more lactose, not less.Paneer grades moderate where a pressed and cured cheese grades low, because there is no long fermentation to consume the milk sugar and no months of drying to concentrate away the whey
- Very high in dairy protein, the maximum grade.Paneer is coagulated casein by design, so it is one of the poorest choices in our data for a cow milk protein allergy, level with or above every aged cheese we grade
- Moderate rather than clean on histamine, histamine liberation and tyramine.Better than aged cheese by a wide margin, but not a low-histamine free pass, and cubes left out or reheated from leftovers sit at the worse end
- Moderate FODMAP and moderate for SIBO, and it is the lactose driving both.Fructans and GOS grade clean, so cutting the onion and garlic out of the recipe will not fix a paneer problem
- The dish is usually the trigger, not the cheese.Paneer grades clean on nightshade, salicylate and glutamate, while the tomato base, chilli, garlic and onion around it carry loads the cheese does not
