What to know about lotus root

Lotus root is the segmented rhizome of the lotus, the one with the ring of holes running through it, sliced for stir fries, simmered in soups, stuffed with pork or fried into crisps. Chemically it is calm: clean on histamine, histamine liberation, tyramine, gluten, lactose, sulfites, nitrites and free glutamate. Its grades sit at borderline for total FODMAPs, fruit sugar, salicylate, oxalate and nickel, and its overall FODMAP standing is medium, so portion is the honest answer to most gut questions about it. The one non negotiable is that this is an aquatic crop, and aquatic crops carry a preparation rule that land vegetables do not.

Watch for

  • Do not eat it raw, and do not peel it with your teeth.Lotus root grows submerged in freshwater ponds, and in regions where the giant intestinal fluke is endemic, raw aquatic plants including lotus root, water caltrop and water chestnut are the recognised route of infection. Peeling with a knife and cooking it through removes that risk completely.
  • Medium FODMAP with fruit sugar borderline.Lotus root is a storage organ, so a couple of slices in a soup and a plateful of braised root are different propositions for a sensitive gut. This is a portion food, not an avoid food.
  • Pre sliced and vacuum packed lotus root is a different product from the fresh rhizome.Cut lotus root browns within minutes, so packers hold it in an acidulated or preserved solution. The fresh root is graded clean on sulfites; what is in the bag is whatever the packer put there, so read the label if sulfites are your trigger.
  • Borderline on nickel, which is the usual grade for root vegetables and matters only as part of a daily total if you are managing systemic nickel allergy.
  • Fried lotus root crisps are a snack food.The oil, the salt and the seasoning blend come with their own triggers, and a bag of them is a far larger portion of root than anyone would eat braised.
