What to know about evaporated milk
Evaporated milk is cow milk with about half the water boiled off and no sugar added, so it is easy to confuse with condensed milk. The difference matters: evaporated milk is unsweetened, but concentrating it pushes its lactose and dairy protein even higher, which is why it can trigger stronger bloating and dairy reactions than plain milk despite the missing sugar.
Watch for
- Very high in lactose, since removing the water concentrates the milk sugar, a frequent trigger for lactose intolerance
- High in dairy protein, with concentrated casein and whey that make it unsafe for a milk allergy
- Poor for SIBO, as the concentrated fermentable milk sugar can feed small-intestinal overgrowth
- Not the same as condensed milk: evaporated has no added sugar, so do not swap one for the other in a recipe
