A Cornish hen is not game and not a separate species. Under the USDA definition a Rock Cornish game hen is simply a young immature chicken of a Cornish or Cornish cross breed, slaughtered small and sold whole at around a kilo or less, and it does not have to be a hen at all. That matters for a trigger diary because game birds carry a real amine story from hanging and Cornish hens do not: this is chicken, and it grades like chicken.
