What to know about nopal

Nopal is the flattened paddle of the prickly pear cactus, eaten as a vegetable across Mexican cooking, and it is a different food from the cactus pear, which is the fruit of the same plant. It is not a nightshade, despite often sharing a plate with chilli and tomato. On our criteria it is quiet: clean on histamine, histamine liberation, tyramine, gluten, lactose and glutamates, and low FODMAP, with mild moderate grades for salicylate, oxalate and nickel. The two things actually worth knowing about nopal are mucilage, the slippery sap Mexican cooks call baba, which is the real practical issue in the kitchen and occasionally in the gut, and the genuine clinical research on its effect on post-meal blood glucose.

Watch for

  • Mucilage is the practical problem.Nopal is loaded with soluble fibre that turns to gel when cut, and a large serving of soluble fibre can produce gas, bloating or loose stools even though nopal is low FODMAP and none of that is a FODMAP reaction. Boiling and rinsing removes most of it
  • Moderate oxalate.Cactus pads contain calcium oxalate, so nopal is worth logging if you form kidney stones and eat it regularly. An occasional serving is a different matter from a daily one
  • It measurably affects blood glucose.Cactus paddle has been studied for blunting the post-meal glucose rise, and the effect is real rather than folklore, which is useful to know if you take glucose-lowering medication
  • Mild salicylate and mild nickel, both at the moderate end.Neither is a headline trigger, but both are worth noting on a strict elimination phase
  • Nopal rarely arrives alone.Nopales are usually cooked with onion, garlic, chilli, tomato and queso fresco, or served in tacos, and those companions carry far more trigger load than the cactus does
