The kumquat inverts everything you expect from citrus. You eat it whole, unpeeled, in one or two bites, and the thin rind is the sweet part while the pulp inside is the sour one. On our grades it also inverts the usual citrus trigger picture. Orange is a strong histamine liberator at D, high in salicylates at D and very high in oxalate at E. Kumquat grades B for histamine liberation, B for salicylate and A for oxalate, with A for histamine content. That makes it the mildest common citrus on this data set, and a genuinely useful one to test if oranges and mandarins do not agree with you. The catch is the part that makes it interesting: you are eating the peel, and citrus peel is where the aromatic oils sit.
Watch for
Much milder than orange on our data, but not blank. Kumquat carries a B for histamine liberation, which is the low end of borderline. Two kumquats and a bowl of twenty are different exposures. / You swallow the rind, and rind is where citrus keeps its essential oils. Our salicylate grade for kumquat is B, moderate, but if salicylates are your confirmed trigger, judge kumquat by your own reaction rather than assuming a small fruit means a small dose. / Oxalate A is the standout. Orange, mandarin and grapefruit all grade D or E for oxalate, so kumquat is the citrus to reach for if kidney stones or oxalate load are the reason you dropped citrus. / Moderate FODMAP at B, with B for excess fructose and B for SIBO fermentability. They are small and moreish, which is exactly how people accidentally eat a large FODMAP portion of them. / The preserved forms are a different food. Candied kumquats and kumquat marmalade are mostly sugar, and dried citrus is a category where added sulfites are common even though fresh kumquat grades A for sulfite.
