What to know about palm kernel oil

Palm kernel oil is pressed from the kernel inside the stone of the oil palm fruit, not from the orange flesh around it, and that one difference makes it a genuinely different fat from palm oil. It is over eighty per cent saturated and dominated by lauric acid, which puts it much closer to coconut oil than to the palm oil it shares a plantation with. On triggers it is as quiet as any refined oil: graded A for histamine, histamine liberation, salicylates, oxalate, nickel, glutamates, sulfites, gluten, dairy protein and all FODMAP groups, and A for SIBO fermentation. What it grades badly on is the same thing palm oil does, an anti-inflammatory D and a C for DASH and Mediterranean, which comes straight from that saturated fat load. Its real signature is texture: it melts just below body heat, which is why it coats confectionery, and it saponifies cleanly, which is why it is in most bar soap.

Watch for

  • The giveaway on a label is a coating rather than a filling.Palm kernel oil, palm kernel stearin and hydrogenated palm kernel oil are what give "chocolatey coating", compound chocolate, ice cream shells and yoghurt-covered snacks their snap without cocoa butter. If a coated product bothers you, the sugar, milk solids or cocoa in the coating are the likelier suspects, since the oil itself grades A across the trigger set
  • Frequently confused with palm oil in the sustainability conversation.They are co-products of the same fruit, so avoiding one does not automatically avoid the other, and RSPO certification is tracked separately for kernel oil. Kernel oil also carries a much larger share of non-food use, mostly soap, detergent and cosmetics
  • Around half its fatty acids are lauric acid, the same medium-chain fat that dominates coconut oil.That similarity is real for chemistry and cooking, but it does not make them interchangeable in a coconut-free diet: they come from unrelated plants, so a coconut allergy is not a reason to avoid palm kernel oil
  • Non-dairy creamers and whipped toppings built on palm kernel oil are often not dairy free.Sodium caseinate is a common partner ingredient and is a milk protein, so check the allergen line rather than the front of the pack if casein is your issue
  • Graded D on the anti-inflammatory scale and C for DASH and Mediterranean.That is a dietary-pattern judgement about saturated fat, not a sensitivity trigger, and it reads the same as palm oil even though this oil is the more saturated of the two
