What to know about prosciutto

Prosciutto is dry-cured ham aged for months, and that long cure is exactly what makes it one of the harder charcuterie foods for histamine and tyramine intolerance. The aging builds very high histamine and very high tyramine, it also acts as a histamine liberator, and the salt-cured protein carries high free glutamate. If flushing, headaches or a racing heart follow salami, aged cheese or red wine for you, prosciutto belongs on the same list.

  • Very high in histamine: months of curing and aging accumulate it, making prosciutto a leading trigger for flushing, hives, headache and nasal congestion
