Serving size, prep, and portion notes for chicken
Is chicken low FODMAP? Yes, and it is one of the safest proteins across the board. Plain chicken has no FODMAPs, no gluten and no lactose, and it is low in histamine, salicylates and tyramine when fresh. It is a staple of elimination diets for exactly that reason. The triggers only appear once it is breaded, crumbed, marinated or sauced, which is where the wheat, garlic, onion and other FODMAPs come in.
Watch for
Plain fresh chicken is low FODMAP and low histamine; breaded, battered or crumbed chicken adds wheat and gluten / Marinades, rubs, gravies and rotisserie seasonings are the usual hidden triggers, since garlic and onion powder are high-FODMAP / Like all meat, chicken gains histamine if it is cooked and then kept as leftovers too long, so cool and refrigerate or freeze it promptly / Not vegetarian or vegan
