What to know about chicken liver

Chicken liver is the mild, approachable organ meat, softer in flavour than beef liver and carrying roughly a third of its vitamin A, but on the amine columns it is the busier of the two. It grades moderate on histamine, moderate on histamine liberation and moderate on tyramine all at once, while beef liver grades clean on the last two. That combination, plus the fact that offal spoils fast and most people meet chicken liver as pate that has been sitting in a fridge for days, is why it can land harder than its gentle reputation suggests.

Watch for

  • Three moderate amine grades stacked together: histamine (C), histamine liberation (C) and tyramine (C).If organ meat has bothered you before, chicken liver deserves its own test rather than being lumped in with beef liver
  • Offal degrades quickly and amines only rise with time, so liver cooked the day it was bought is a different proposition from thawed liver, day old leftovers or liver that spent a while at the back of the fridge
  • Pate and parfait concentrate every one of those issues.The liver is cooked, blended and then kept for days, usually enriched with butter or cream and often finished with brandy, port or madeira, each of which brings its own amine load
  • It is still liver, so around 100 g delivers preformed vitamin A in the region of the adult daily upper limit, which is why liver of any kind sits on the avoid list in pregnancy even though chicken liver runs far below beef liver
