Suovas, dried reindeer and reindeer sausage are matured products and should be logged as their own entries. Cold smoking in particular involves hours at temperatures warm enough for bacteria to keep working, which is the amine-building window rather than a kill step. / The frozen shavings are the happy exception. Reindeer sold as a frozen block and planed straight into a hot pan never spends time chilled and unfrozen, which is the state amines actually accumulate in. Chronic wasting disease was confirmed in wild reindeer in Norway in 2016, the first case in the species and the first in Europe, and Norway responded by culling an entire herd.
