What to know about boar
Boar is pig that was never domesticated, and it inherits every pork question plus a few of its own. The fresh meat grades clean on gluten, lactose, all four FODMAP groups, nitrites, sulfites, nightshades and free glutamate, and only moderate on histamine, which tracks how long game hangs before butchering rather than anything in the living animal. Two things drive the real caution. Pork is the meat alpha-gal reactions are most often traced to, and boar is pork. And most boar never reaches anyone as fresh meat at all: it arrives as salami, prosciutto or sausage, at which point curing has added the nitrites and amines the fresh cut did not have.
Watch for
- Trichinella is present in wild pigs and the answer is a probe thermometer, not a colour check.Take whole cuts and especially anything minced or stuffed into sausage to an internal 165F (74C)
- Hepatitis E is the boar-specific one.The virus replicates in the liver, and undercooked wild boar liver and raw liver sausage are a documented infection route across Europe and Japan
- Cured boar is a different food from boar.Cinghiale salami, wild boar prosciutto and fermented boar sausage are matured and nitrite-cured, which lands them in the high histamine, high tyramine, added nitrite bracket the fresh meat sits outside of
- Alpha-gal applies, and boar catches people out because they have swapped away from farmed pork and assume wild pig is a different animal.It is the same species
