Lemon is a classic histamine liberator: it is low in histamine itself, yet it prompts your mast cells to release their own histamine, which is why citrus can bring on hives, itching, flushing or a runny nose even though the fruit is not a high-histamine food. That catches people out on a low-histamine diet, because the usual trick of choosing fresh, unaged foods does not neutralise a liberator.
