Why nitrites food checker matters

Nitrites are preservatives commonly used in cured meats. Some people are sensitive to them, experiencing headaches, flushing, or other symptoms after consumption.

  • Choose uncured or 'no nitrates/nitrites added' meat products

What to know about endive

Endive is a bitter chicory leaf that grades clean nearly everywhere it matters: no histamine, no lactose, no gluten, no nightshade, and low oxalate, which is unusual for a salad green. Its one real flag is salicylates, where it grades high, so endive belongs in the same mental bucket as other bitter leaves if aspirin or salicylate-rich produce sets you off. The other thing worth knowing is that endive is not the chicory that causes FODMAP trouble. The inulin people react to in chicory root fibre and high fibre snack bars sits in the taproot, not in the leaf, so endive grades low on fructans and only moderate on total FODMAPs by volume.

Watch for

  • High in salicylates, the one grade that stands out on this leaf.Braising, blanching or washing does not lower salicylate content, so portion size is the only real lever
  • Moderate on total FODMAPs by volume rather than by any single compound.A few spears alongside other food is a small dose, a whole head eaten raw in one sitting is not
  • The chicory fructan problem lives in the root.Chicory root fibre and inulin added to protein bars, yoghurts and high fibre cereals are a separate exposure worth logging on their own line
  • The plate around endive is often the real trigger. It is nearly always served raw with vinaigrette, blue cheese or walnuts, which puts vinegar, aged dairy and nuts into the same meal
