What to know about butterfat
Butterfat is the fat fraction of milk, the part that rises as cream and concentrates into butter, and it is the mirror image of beef tallow: an animal fat that genuinely is dairy. The useful thing to understand is that fat is not where the trouble in milk lives. Lactose is water soluble and stays in the whey, and casein sits with the milk solids, so separating the fat leaves most of both behind. That is why butterfat grades clean on lactose in our data, the same call we make for ghee. Where it stops being clean is dairy protein, graded a borderline C, because concentrating fat reduces residual casein and whey without guaranteeing their absence. That gap is the whole page: lactose intolerance and milk protein allergy are different conditions with different answers, and butterfat is one of the clearest places the two separate. It is otherwise clean on FODMAPs, gluten, histamine, tyramine, sulfites, nitrites, glutamates and nightshade.

- Lactose is not in the fat.Butterfat grades clean on lactose because lactose stays with the watery whey during separation, which is why many people who cannot drink a glass of milk handle butterfat and ghee without trouble
- Dairy protein is graded a borderline C, not clean.Traces of casein and whey survive the separation, so butterfat is not the safe option for a diagnosed milk protein allergy that it can be for lactose intolerance
- It is dairy whatever the label calls it.Butterfat hides on ingredient lists as milkfat, anhydrous milk fat and butter oil, and shows up in chocolate, biscuits, ice cream and coffee whiteners
- Butterfat is not butter.Butter is roughly four fifths fat plus water and milk solids, and it grades far higher on lactose than the isolated fat does, so the two are not interchangeable for a lactose problem
- Cultured and aged dairy is a separate trigger question.Butterfat itself is graded low in histamine, but aged cheeses and cultured cream made from the same milk are not
