What to know about chai tea

With chai, the black tea is the boring half. The spice blend is what changes the picture: cinnamon, ginger, clove, cardamom and black pepper are each salicylate-dense on their own, and together they lift chai to a moderate salicylate rating where plain black tea sits at mild. Caffeine is moderate and comes entirely from the tea, not the spices. The other thing worth knowing is that chai is one of the few drinks where brew strength decides the FODMAP answer: a quick weak brew tests low, a long strong steep tests high, because more fructan comes out of the botanicals the longer they sit.
