Celery seed is the one spice on this list where the allergy label matters more than the chemistry grades. Celery is a declarable allergen in the EU and UK, one of the fourteen that must be named on a label no matter how small the amount, and celery seed is the concentrated form of it: the seed of wild celery (smallage), not the salad stalk. Reactions to celery are well documented and range from oral itching to full anaphylaxis, including exercise-dependent cases where the food alone is tolerated. On the food-chemistry side the seed reads clean, with histamine, salicylate, oxalate, nickel, glutamate and every FODMAP subgroup graded A, and none of the stalk's polyol problem carries over at pinch quantities. So if you tolerate celery, the seed is an easy seasoning. If you do not, the seed is the version most likely to hide from you, because it mostly reaches your plate as celery salt.

- Celery is one of the fourteen allergens that must be declared on EU and UK labels, and that includes celery seed, celery salt and celery extract.It is not on the United States major allergen list, so a US label can legally bury it inside "spices" or "natural flavor"

- Gram for gram the seed carries far more celery protein than a stalk does, and cooking is not a reliable safeguard: the birch-related celery allergen breaks down with heat but others in celery do not, so cooked celery has still caused reactions
- Celery sits at the centre of the celery-mugwort-spice cluster, so mugwort and birch pollen allergy raises the odds of reacting to celery and to its Apiaceae relatives like carrot, fennel and coriander
- The food-chemistry grades themselves are quiet: histamine A, liberator A, salicylate A, oxalate A, nickel A and glutamate A, with the overall FODMAP figure unrated rather than high
