What to know about zaatar spice mix

A jar of zaatar spice mix is a ratio rather than a recipe, and the ratio moves with the region: Lebanese blends lean sumac-forward and generous with sesame, Palestinian ones foreground the wild hyssop itself, and some Syrian and Turkish versions fold in caraway or aniseed. For a trigger journal that variability is the whole point, because two jars with the same label can behave differently. The mix grades borderline C for salicylates, which is what concentrated dried herb plus sumac should look like, and it grades A for gluten, lactose, dairy protein, nightshade and every FODMAP subgroup. The practical question is not whether zaatar is a trigger food but how much of it lands on the plate, since it is eaten by the spoonful in oil or baked in a crust on manakish rather than by the pinch.
