What to know about chicken fat
Chicken fat, better known by its Yiddish name schmaltz, is rendered from chicken skin and trim and grades clean on every sensitivity column we track: no lactose, no dairy protein, no gluten, no FODMAPs, and low on histamine, salicylates, oxalates, nickel, sulfites and glutamates. It exists as a staple fat for a reason that matters here. Kosher kitchens cannot cook meat in butter, so schmaltz became the dairy-free cooking fat of Ashkenazi food, and it is still the cleanest butter substitute in that cuisine. The one real complication is how it is traditionally made. Schmaltz is usually rendered with sliced onion, which crisps up with the skin into gribenes, and onion is a concentrated fructan source that the pure fat is not. Whether that matters comes down to straining, and the answer is more reassuring than most people expect.
Watch for
- Traditional schmaltz is rendered with onion.Fructans are water soluble and do not dissolve into fat, so fat that has been properly strained is still low FODMAP, but any onion or gribenes left suspended in the jar carries fructans with it
- Commercial schmaltz sometimes lists onion as an ingredient outright.If onion is on the label rather than just in the method, assume solids made it into the jar
- Schmaltz is the traditional binder for chopped liver and matzo balls.Chopped liver leans on chicken liver, which is a moderate histamine and tyramine food in its own right, so a reaction to chopped liver is usually the liver rather than the fat
- Rendered chicken fat oxidises faster than you expect and picks up an unpleasant stale note.Keep it refrigerated and stop reusing it once it smells sharp
- It grades D for DASH and D for anti-inflammatory as a saturated animal fat.That is a dietary pattern note, not a chemical trigger, but it is the honest limit on schmaltz as an everyday fat
