What to know about cottonseed oil
Cottonseed oil is the odd one out among cooking oils, because cotton is grown for fibre and the seed is what is left over. Raw cottonseed contains gossypol, a yellow pigment that is genuinely toxic to humans, so the oil has to be refined, bleached and deodorised before it can be eaten. There is effectively no cold-pressed, unrefined, food-grade cottonseed oil, which flips the usual advice: with peanut, sesame and soybean oil the unrefined version is the one that carries allergenic protein, while cottonseed oil is refined by definition. On our grades it is clean across histamine, salicylate, nickel, sulfite, FODMAPs, gluten and dairy. Its only flag is that it is very high in omega-6 linoleic acid, and its real problem for anyone tracking symptoms is that it is almost invisible, hiding under the words vegetable oil in fried and packaged food.
Watch for
- Gossypol is why this oil is refined-only.It is concentrated in pigment glands in the seed, it is toxic to humans and to single-stomached animals, and refining is what removes it. Low-gossypol cotton varieties have been bred and approved for food use, but the standard supply still depends on processing rather than on the plant
- Clean across the food-chemistry triggers we grade: histamine A, salicylate A, nickel A, sulfite A, glutamate A, FODMAP A.If a fried dish set you off, the batter, the seasoning and the shared fryer are far more likely culprits than the oil itself
- High in linoleic acid, roughly half the fat, which is why it is graded borderline as pro-inflammatory.That is a dietary-pattern note for anyone following an anti-inflammatory or Mediterranean approach, not a sensitivity trigger
- It is not a labelled allergen anywhere, and refined oils are broadly exempt from allergen declaration, so cottonseed oil frequently appears only as vegetable oil or vegetable shortening.If you are trying to eliminate it, packaged snacks, commercial frying oil blends and shortening are where it hides
- Cottonseed allergy does exist, but it tracks the seed protein: crude oil, cottonseed flour and meal, and non-food exposures.That is a different exposure from the fully refined oil, and worth separating in your log
