Serving size, prep, and portion notes for bell pepper
Bell peppers, red, green, yellow or orange, are a nightshade, the same botanical family as tomatoes, potatoes, eggplant and chilli. That is their one real trigger: they score high on nightshade sensitivity, so people who react to the glycoalkaloids in nightshades can get joint aches, digestive upset or skin flare-ups from any colour of capsicum. On every other axis the bell pepper is clean. It is low FODMAP, low histamine, low salicylate, low oxalate and genuinely anti-inflammatory, so if nightshades are not your problem it is one of the safer vegetables you can log.
Watch for
Nightshade, so it can trigger joint pain, gut symptoms or skin reactions in people sensitive to solanine and other glycoalkaloids / Colour does not change the family: red, green, yellow and orange bell peppers are all the same species (Capsicum annuum) and all count as nightshades / Green peppers are picked unripe and carry a bit more of the bitter glycoalkaloids than fully ripe red ones, so some nightshade-sensitive people find green the harshest
