What to know about sesame oil
Sesame oil inverts the usual reassurance about oils and allergies. Sesame became the ninth major US allergen on 1 January 2023 under the FASTER Act, and the version of the oil most people actually cook with is the toasted, dark, aromatic kind used as a finishing drizzle. That oil is typically unrefined, which means it still carries sesame protein and is a genuine risk for anyone with sesame allergy. Plain light sesame oil is more often refined and therefore lower in protein, but the labelling exemption for highly refined oils gives you no way to tell the two apart from the front of the bottle. Beyond the allergen question sesame oil is quiet: A grades on histamine, histamine liberation, tyramine, nickel, sulfites, glutamates, lectins and gluten, with only a borderline salicylate mark and a pro-inflammatory rating from its linoleic acid content.
Watch for
- Toasted sesame oil is usually unrefined, so unlike refined peanut or soybean oil it does carry sesame protein.This is the oil in the category most likely to trigger a sesame-allergic reaction
- Sesame has been a declarable major allergen in the US since January 2023, but highly refined oils are still exempt, so "sesame oil" on an ingredient list tells you nothing about how much protein is in it
- Borderline on salicylates, worth noting if you are on a strict salicylate elimination and using it as a daily finishing oil rather than an occasional drizzle
- Rated pro-inflammatory because of its omega-6 profile, and it is not a Mediterranean-pattern fat despite being plant based
- Low in histamine, not a histamine liberator, and clean on nickel, sulfites, glutamates and gluten, so it is rarely the culprit outside the allergy picture
