What to know about pistachio oil
Pistachio oil is cold pressed from roasted pistachios and used as a finishing oil, drizzled over vegetables, fish or ice cream rather than cooked with. Like other nut oils it demonstrates the press cake effect: the minerals and organic acids that give the whole nut its grades largely stay behind in the solids, so the oil grades gentler than the nut on several columns. The critical exception is allergen protein. This is an unrefined, cold pressed oil, and the reassurance that applies to highly refined nut oils does not transfer to it.
Watch for
- Pistachio is a tree nut and a declarable allergen.Cold pressed, unrefined oils carry residual protein, so pistachio oil is not a safe workaround for a pistachio or tree nut allergy. Only highly refined nut oils are generally considered low risk, and finishing oils are sold specifically for their unrefined flavour.
- Pistachio is in the Anacardiaceae, the cashew and mango family, which is a genuinely useful piece of allergen mapping.Cashew and pistachio cross reactivity is strong and well described.
- Graded moderate for salicylate and oxalate and mild for nickel, glutamate and SIBO fermentation.Those are far gentler than the whole nut, which is the press cake effect at work.
- It has a low smoke point and its flavour is destroyed by heat, so it is a finishing oil.Using it to fry wastes it and produces off flavours.
- It oxidises quickly.Keep it in the fridge and expect a few months rather than a year; rancid nut oil tastes of stale crayons and is the usual reason a bottle disappoints.
