What to know about cuttlefish
Cuttlefish is a mollusc, not a crustacean, and that distinction decides most of the reactions people blame on it. Shellfish allergy splits into two camps: crustaceans (prawn, crab, lobster) and molluscs (cuttlefish, squid, octopus, clams, mussels). Plenty of people react to one group and eat the other without trouble, so a prawn allergy is not automatically a cuttlefish allergy. On the trigger panel the flesh is quiet: no gluten, no lactose, no FODMAPs, no salicylate, no oxalate, no nickel, no sulfites. Histamine sits at moderate, mostly because cephalopods spoil quickly once out of the ice.

- Mollusc allergen, sharing tropomyosin with squid and octopus.Cross-reactivity between the three cephalopods is high even when crustaceans are fine
- Squid ink pasta, risotto nero and black sauces are usually made with cuttlefish ink, so the ingredient can turn up where no seafood is listed on the menu
- Removed entirely on the six-food elimination diet for EoE, which takes fish and shellfish out as a single group rather than one species at a time
