What to know about hard liquor
Hard liquor covers the distilled spirits (vodka, gin, whiskey, bourbon, brandy, rum, tequila), and distillation is what sets them apart from beer and wine: it leaves the gluten protein behind, so spirits are gluten-free, and it strips out most of the histamine and sulfites that make fermented drinks such reliable triggers. The trade-off is that they are far stronger alcohol. Ethanol slows DAO, the enzyme that clears histamine, and grades strongly pro-inflammatory, so spirits can still bother a histamine-sensitive or inflamed gut even when the drink itself tests clean. Botanical, aged and flavored bottles also push the salicylate load up.
Watch for
- Gluten-free: distillation leaves gluten behind, so plain spirits are safe on gluten even when made from wheat or barley.Only flavorings or ingredients added after distilling are a risk, so read the label.
- Lower in histamine and sulfites than beer or wine, but the alcohol still slows DAO (your histamine-clearing enzyme), so it can trigger flushing or a headache in histamine-sensitive people despite the clean base.
- Graded high on salicylates and strongly pro-inflammatory: botanical gins, aged whiskeys and bitters carry plant salicylates, and the ethanol is inflammatory whatever the spirit.
- Not all spirits are equal: vodka and plain gin tend to be the cleanest, while aged bourbon and grape-based brandy sit a step higher on histamine liberation.
