What to know about hard cider

Hard cider stacks several triggers at once: it keeps the apple base high in excess fructose and sorbitol (a polyol), while fermentation and the alcohol itself push up histamine, plus sulfites are added to preserve it. Alcohol also blocks DAO, the enzyme that clears histamine, so hard cider is a common cause of flushing, headache and gut upset even in people who tolerate a fresh apple.
