What to know about jerusalem artichoke
The Jerusalem artichoke is the single most fructan-dense vegetable most people will ever eat. Its flesh stores energy as inulin, a long-chain fructan that human enzymes cannot break down at all, so the entire load arrives intact in the colon for gut bacteria to ferment. That is why it grades at the top of the scale for both FODMAPs and fructans, and why it is the worst-rated vegetable here for SIBO. The gas is not a modern discovery: English gardeners in the 1600s already called it a food that causes "a filthy loathsome stinking wind within the body", and the tuber still carries the affectionate nickname "fartichoke". Away from that one enormous problem it is remarkably clean, sitting at the safe end for histamine, glutamates, nightshade, lectins, sulfites and gluten, and it is even AIP-compliant. If you get bloating and flatulence from Jerusalem artichokes but tolerate most other vegetables, fructan malabsorption is the obvious thing to test rather than a general food intolerance.
Watch for
- Graded at the highest tier for fructans and total FODMAPs.Inulin can make up the large majority of the tuber's dry matter, and no portion is genuinely small enough to be considered safe on a strict low-FODMAP elimination phase
- Worst possible SIBO grade.In small intestinal bacterial overgrowth the fermentation starts higher up the gut than it should, so the bloating tends to arrive within an hour or two rather than the next day
- Cooking does not rescue it.Roasting, boiling and pureeing all leave the inulin chain broadly intact, so a "well cooked" sunchoke soup delivers the same fructan load as a raw one
- You can meet the same molecule without ever buying the vegetable.Inulin is extracted commercially from Jerusalem artichoke and chicory root and added to high-fibre bars, keto breads, protein powders, yoghurts and prebiotic drinks, usually listed as inulin, chicory root fibre or oligofructose
- Genuinely clean on the other axes: safe grades for histamine, tyramine, glutamates, nightshade, lectins, sulfites, gluten and lactose, with only mild ratings for salicylates, oxalate and nickel
