Flageolet beans are the pale green French beans picked before they mature, then dried away from the light so they keep their colour, and served classically alongside a leg of lamb. Flageolets carry the top rating for galacto-oligosaccharides, the worst possible rating for SIBO among common beans, high lectins and high nickel, with moderate oxalate on the side. They are clean on gluten, lactose, salicylates and nightshades, so if flageolets sit badly the cause is fermentation and mineral load rather than food chemistry.

- Tinned flageolets sit in liquid that has drawn water-soluble FODMAPs out of the beans, so draining and rinsing the tin is worth doing even though the bean looks delicate enough not to need it
