What to know about cucumber seeds
Cucumber seeds are eaten two ways: accidentally, every time you slice a cucumber and leave the watery core in, and deliberately in India, where dried cucumber seed is one of the four char magaz melon seeds blended into thandai and sweets. Logged on their own they do not grade like the vegetable they came from. Cucumber seed picks up a moderate lectin grade, a moderate SIBO grade, only a mild anti inflammatory rating and a moderate fit for a Mediterranean pattern, and like every seed it is graded out of AIP. What it is not is a chemical trigger: cucumber seed is low FODMAP and clean on histamine, salicylate, oxalate, nickel, sulfite and glutamate. If cucumber repeats on you or sits heavy, the fix people have used for generations is to run a spoon down the seed cavity and take it out.
Watch for
- Moderate lectin grade, which is where the seed differs most from a plain salad vegetable.Seed coats are the part of a plant where lectins concentrate, so a spoon of ground cucumber seed in a drink is a different exposure from the few seeds inside one slice
- Graded moderate for low fermentation SIBO protocols.Not an exclusion, but a food to reintroduce with a measured amount rather than assume from the cucumber grade
- Not AIP compliant.The autoimmune protocol removes all seeds during elimination regardless of how benign the parent vegetable is, so char magaz blends, thandai and seed topped breads all come out at that stage
- The seeds are not the bitter part.Cucurbitacin, the compound behind cucumber bitterness and the burping cucumbers are famous for, concentrates in the skin and the stem end rather than the seed itself. Scooping the seed cavity still helps, because it takes the watery pulp around it with it, and burpless or English varieties are bred lower in cucurbitacin from the start
- Clean on FODMAPs, histamine, salicylate and oxalate, so if a cucumber heavy salad reliably bothers you, the seeds are unlikely to be a chemical explanation.Volume, the cucurbitacin in the peel, or the dressing are more likely candidates
