What to know about clams

Clams are bivalve molluscs, which is a different allergen group from crustaceans like crab and prawn, so a shrimp allergy does not automatically mean a clam allergy and a clam allergy does not automatically mean a shrimp one. On food chemistry they are quiet: clean on gluten, salicylates, sulfites, glutamates, tyramine and lactose, with moderate grades for histamine and nickel. The bigger question with clams is not what is in the meat but what was in the water, because a filter feeder concentrates whatever the tide brought it.

Watch for

  • Moderate histamine (graded C).Shellfish amines climb once the catch comes off ice, so how a clam was handled between the boat and the pan matters more than the species does
  • Moderate nickel (C).Molluscs are one of the recognised dietary nickel sources, which is worth logging if you are working through systemic nickel allergy
  • Filter feeders concentrate algal toxins.Paralytic shellfish poisoning from a red tide bloom is neither an allergy nor a histamine reaction, and steaming, frying, freezing or canning does not destroy saxitoxin, so approved harvest waters and posted beach closures are the only real protection
  • Clean on every FODMAP group, so the gut load arrives with the dish rather than the shellfish: garlic and white wine in linguine alle vongole, onion and cream in chowder
