What to know about cauliflower

Is cauliflower low FODMAP? Not really. Cauliflower is high in mannitol, a polyol FODMAP, which is why the low-carb darling behind cauliflower rice and cauliflower pizza crust can wreck a sensitive or SIBO gut. It is clean on histamine, oxalate and nickel and is genuinely anti-inflammatory, so the trouble is almost entirely fermentation: it grades high FODMAP, high polyol and poor for SIBO, plus moderately high in salicylates.

  • High in mannitol, a polyol FODMAP, so even a modest portion can cause bloating, gas and cramps in IBS
  • Ferments heavily, making it a poor pick on a low-fermentation SIBO diet
