What to know about white pepper

White pepper is the ripe Piper nigrum peppercorn with its dark outer skin soaked away, leaving the pale inner seed that gets ground into light coloured sauces like bechamel and mashed potato. Its real trigger is salicylate, graded D, the same as black pepper. Some databases and strict AIP diets file all peppercorns under nightshades, but botanically white pepper is not a true nightshade at all: it is the seed of a pepper vine, unrelated to tomato, potato and eggplant.

Watch for

  • High in salicylates (grade D), the main reason white pepper can trigger salicylate sensitive people
