Lamb is the red meat that turns up most often as a novel protein on elimination diets, and its grades explain why. Fresh lamb is low histamine, no histamine liberator, and clean on gluten, lactose, nickel, sulfites, nitrites, salicylates, free glutamate, tyramine and nightshades. If you are hunting a trigger and want an unambiguous protein to build a baseline meal around, lamb is one of the short list of foods that qualifies. The two honest caveats are that it grades pro-inflammatory as a fatty red meat, and that lamb is mammalian meat, which puts it squarely inside the alpha-gal picture along with beef and pork.

Lamb and mutton count, and reactions are typically delayed by three to six hours after the meal, which makes them easy to blame on the wrong food / Clean on every FODMAP group. Plain meat has essentially no fermentable carbohydrate, so in practice the load arrives with the garlic, onion and yoghurt marinades lamb is nearly always cooked in / Graded moderate on lectins, in line with the other meats in this data set rather than as a standout, so it is not a useful reason to pick another protein
