What to know about fennel seeds
Fennel seeds, the sweet anise-scented seed chewed after meals across South Asia and pressed into Italian sausage, grade low FODMAP and clean on histamine content, gluten, lactose, sulfites, nitrites, glutamates and tyramine. The grade to know is salicylate at a moderate C, with mild B marks for oxalate, nickel and histamine liberation. Keep the seed separate from the fennel bulb, which is its own entry here and grades D for FODMAPs, fructans and salicylates. A low FODMAP result for the seed tells you nothing about the vegetable.
Watch for
- Moderate salicylate (C).Culinary portions are tiny, but aromatic seed spices are among the first things pulled during a strict salicylate elimination and reintroduced later by the teaspoon.
- Mild B marks for oxalate, nickel and histamine liberation.Irrelevant at a pinch in a curry, worth noticing if you drink fennel tea all day or chew mukhwas after every meal.
- The seed is not the bulb.Fennel bulb grades D for FODMAPs and fructans, so people who tolerate fennel seed fine can still react badly to roasted or braised fennel.
- Fennel seed usually arrives inside something else: Italian sausage, finocchiona salami, a masala or a spice tea.Cured and aged meat brings histamine and nitrites, and a blend brings chilli and other spices, so log the whole dish rather than blaming the seed.
