What to know about soy milk

Soy milk is high FODMAP and high in nickel, which surprises people who assume any dairy-free milk is gentle. The FODMAP load comes from galacto-oligosaccharides (GOS), so how the milk is made matters: soy milk pressed from whole soybeans is high FODMAP, while soy milk built from soy protein isolate tests low FODMAP and is usually fine.
