What to know about broccoli sprouts
Broccoli sprouts are the richest known dietary source of glucoraphanin, the precursor that becomes sulforaphane, carrying roughly ten to a hundred times what mature broccoli heads contain. That single fact is why they are studied more than any other sprout. For a trigger journal the useful surprise is that they are also much gentler than the broccoli they grow into: mature broccoli grades high in salicylates and very high in free glutamate, while the sprouts grade only mildly salicylate and clean on glutamate, and their FODMAP load sits at moderate rather than the fructan and polyol load of a broccoli head. The catches are portion size, the fact that hard cooking destroys the enzyme that makes sulforaphane at all, and the same raw-sprout bacterial risk that follows every sprout.
Watch for
- Sulforaphane is not present in the sprout.Glucoraphanin and the enzyme myrosinase sit in separate compartments and only meet when the tissue is damaged, so chewing thoroughly, chopping or lightly crushing the sprouts is what actually produces sulforaphane. Boiling or a hot stir fry denatures myrosinase and you lose most of the conversion.
- Moderate FODMAP with mild fructans and mild polyols.A tablespoon on top of a bowl is a small dose, a daily jar-sized serving taken as a supplement habit is where sensitive guts start noticing bloating.
- Same raw-sprout food-safety caveat as alfalfa.Sprouting conditions favour Salmonella and E. coli, so people who are pregnant, immunocompromised or elderly are advised against raw sprouts of any kind.
- Mild oxalate and mild salicylate, both far below the levels in mature broccoli.Worth noting only if you are running a strict elimination and eating them by the handful.
- Clean on histamine, tyramine, gluten, lactose, sulfites and nightshades, and they grade strongly anti-inflammatory.
