Is beef a trigger food? Fresh beef is one of the cleaner proteins for sensitive eaters: no gluten, no lactose, and low in histamine, salicylates and FODMAPs when it is fresh. The real caveat is age and processing. Aged, dry-aged, cured, smoked or deli beef, and beef left too long in the fridge, climbs in histamine and other biogenic amines, and that is the version that trips up people with histamine intolerance.
