What to know about gluhwein
Gluhwein, the hot spiced red wine of European Christmas markets, is one of the most heavily stacked drinks in this database. The red wine base alone carries histamine at D, sulfites at D and tyramine at C. The mulling spices layer on salicylates at D, since cinnamon, clove and star anise are among the most salicylate dense ingredients in any kitchen. Then comes the added sugar, which lifts total FODMAPs and excess fructose to C and pushes the SIBO grade to D. Almost nobody reacts to one thing in gluhwein. - Tyramine at C from the wine, which is the grade that matters if you take an MAO inhibitor or get reliable wine headaches
- Served hot, which speeds gastric emptying and alcohol absorption, so the same dose reaches you faster than a cold glass would
- Added sugar puts it at C for excess fructose and D for SIBO, on top of the alcohol itself
