What to know about salt
Salt is not a food-chemistry trigger at all. Sodium chloride carries no histamine, salicylate, FODMAP, oxalate or gluten, so it is safe across every sensitivity this journal tracks. Its only real dimension is sodium: for blood pressure the DASH pattern asks you to keep total sodium down. One common mix-up worth clearing up is MSG, monosodium glutamate, which is a glutamate source and a separate trigger from plain salt.
Watch for
- Sodium is the only genuine concern: a high-salt diet raises blood pressure, which is why the DASH approach caps daily sodium
- MSG (monosodium glutamate) is a glutamate, not the same as table salt, so a glutamate sensitivity is not a reason to avoid ordinary salt
- Brightening food with fresh herbs like chive, thyme or dill lets you use less salt without losing flavour
