Finger lime is an Australian rainforest citrus whose flesh is not segmented in the usual way. Instead the fruit is packed with tiny spherical juice vesicles that separate cleanly when squeezed and burst individually, which is why it is sold as citrus caviar and used a few grams at a time as a finishing garnish. On the trigger chart it is quiet: clean on gluten, lactose, dairy protein, nightshade, nickel, sulfite and oxalate, with only mild grades for salicylate, histamine liberation and excess fructose. The portion helps as much as the chemistry, since a teaspoon of vesicles scattered over oysters or a dessert is a very small exposure.
Watch for
- Its histamine liberation grade of B sits oddly against lemon and lime, both graded D in this dataset.Finger lime is a true Citrus, so if you are strict about citrus and histamine, do not read the gentler grade as settled. Trial a small amount rather than assuming it behaves differently from other limes.
- Excess fructose is graded mild.Irrelevant at garnish quantity, worth noting if you are eating them by the spoonful or using a finger lime marmalade.
- The peel carries the aromatic oils, as it does in all citrus, and contact dermatitis from citrus peel oil is a real if uncommon problem for people handling a lot of fruit.
- Colour varies from pale green through pink to almost black depending on cultivar, and it tells you nothing about acidity or trigger load.Do not read a red finger lime as sweeter.
