What to know about cumin seeds

Whole cumin seeds are the little ridged seeds you dry-toast in a pan or bloom in hot oil (tempering, or tadka) before they go into a curry, dal or rice. Used whole in normal cooking amounts they are low-trigger: low salicylate, low histamine and low FODMAP. The main caveat is elimination diets, where seed spices including cumin are paused during a strict AIP reset.
