Beef liver is the most nutrient dense food most people ever eat, and that is also its only real problem. As a food chemical it is quiet: graded clean on gluten, lactose, FODMAPs, salicylates, oxalates, nickel, glutamates and lectins. What it carries instead is a pharmacological dose of preformed vitamin A and copper.   • Only borderline for DASH, Mediterranean and anti-inflammatory eating, which is a diet-pattern note rather than a sensitivity trigger: liver is very high in cholesterol and is not a food those patterns are built around
