What to know about celery stalk

A single celery stalk is where the low-FODMAP maths gets strict: Monash puts the safe limit at roughly half a stalk, because celery is very high in mannitol, a sugar alcohol. That matters most for the celery-juice trend, where several stalks are blended into one glass and the polyol load stacks fast. It is also poorly suited to a SIBO approach for the same reason, even though the stalk is otherwise a clean, non-reactive food.

Watch for

  • Very high in mannitol per stalk, so about half a stalk is the low-FODMAP cutoff and a whole one is already over
  • Celery juice concentrates several stalks into one serving, multiplying the polyol load well past a comfortable amount
  • Rated poorly for SIBO because the fermentable mannitol feeds the exact bacteria a SIBO plan tries to starve
  • Only borderline for salicylates, oxalates and nickel, so those are minor next to the polyol
