Whitefish is two different foods wearing one label. It can mean the actual freshwater whitefish, a lake species in the salmon family that reaches most people smoked, and it is also used loosely for any lean white-fleshed fish such as cod, haddock, pollock or sole. Either way, fresh whitefish is one of the cleanest proteins you can log: graded clean for FODMAPs, gluten, lactose, salicylates, oxalates, nickel and sulfites, with only a moderate histamine grade against it. That histamine grade is the whole story, and it is really a question of handling.
