What to know about winter melon

Winter melon is a savoury vegetable, not a dessert melon, and reading dessert-melon data across to it will mislead you. Benincasa hispida is a large pale gourd with a waxy skin, simmered in Chinese soups, braised, or candied into petha and winter melon sugar. It has no high grade anywhere: histamine, tyramine, salicylate, oxalate, nickel and free glutamate all sit in the moderate middle, and it is clean on gluten, lactose, sulfites, nitrites and nightshades. That mildness is exactly why it turns up in convalescent cooking. Its FODMAP status is untested rather than low, and the honest caveat is that almost nothing about a bowl of winter melon soup comes from the gourd.

Watch for

  • Not the same as honeydew or casaba.Those are sweet Cucumis dessert melons graded separately, and honeydew in particular carries a high FODMAP grade that winter melon does not share. Do not substitute one entry for the other in your journal
  • FODMAP fields are unrated.Wax gourd has not been lab-tested for portion thresholds, so the widely repeated claim that it is low FODMAP is an assumption. Log it as a single-food test if your gut is the issue
  • Everything else lands in the moderate band with no spikes, which makes winter melon a reasonable candidate food during elimination but not a certified-clean one
  • Winter melon soup is built on pork bones, chicken stock, cured ham, dried scallop or shiitake.Those push histamine and free glutamate far above anything the gourd contributes, and they are the usual explanation for a reaction to the dish
  • Candied winter melon and winter melon tea are a different food altogether.The gourd is boiled in sugar syrup until it is essentially a sweet, so the vegetable grades on this page do not describe the bubble tea version
