What to know about brazil nut oil
Brazil nut oil is a case where the pressing changes almost everything except the part that can hurt you. Whole brazil nuts grade D for salicylates, D for nickel and C for both histamine and histamine liberation; the pressed oil grades A for histamine, liberation, nickel, oxalate, sulfites and every FODMAP group, with salicylates dropping to a borderline B. Those compounds ride with the protein and mineral fraction that stays behind in the press cake. So does the selenium, which is the thing brazil nuts are famous for, so an oil is not a selenium supplement whatever the bottle implies. What pressing does not remove is allergen. Ber e 1, the brazil nut 2S albumin, is heat stable and pepsin resistant, culinary and cosmetic brazil nut oils are sold cold pressed and unrefined, and the oil fraction itself has been shown to help drive that protein to react.
Watch for
- Brazil nut is one of the most severe tree nut allergies there is, and its major allergen Ber e 1 survives both roasting and stomach digestion.Cold-pressed, unrefined oil keeps residual nut protein, and research on brazil nut phospholipids suggests the oil fraction actively enhances the allergic response to Ber e 1. Treat the oil as the nut
- Most brazil nut oil on sale is a cosmetic carrier oil rather than a food oil.Rubbing a potent tree nut protein into broken or eczematous skin is a recognised sensitisation route, so it is worth knowing what is in a body oil if there is a nut allergy in the household
- It is not a way to get selenium.Brazil nuts hold selenium as selenomethionine bound into the seed protein, and pressing concentrates it in the cake while the oil carries only traces. Useful in both directions: the oil will not push you towards selenosis, and it will not do the job of the nut
- Salicylates grade B, the only trigger mark on the row, against D for the whole nuts.A drizzle is a small dose but it is not a zero
- Roughly half polyunsaturated fat with a low smoke point, so it goes bitter and oxidises with heat and turns rancid in a warm cupboard. It is a finishing oil, and a small bottle is the right bottle
