What to know about mackerel
Is mackerel high in histamine? The chart grades it high on histamine, alongside tuna, and clean on FODMAPs, gluten, lactose, salicylates, oxalates, nickel, sulfites, glutamates, lectins and nightshades. But mackerel is the textbook scombroid fish, and that is the whole story. Its dark red muscle is loaded with free histidine, the amino acid that bacteria convert into histamine once the fish spends time above fridge temperature. The grade describes mackerel that stayed cold. Mackerel that did not can carry many times more histamine, and because histamine is heat stable, grilling, smoking or canning will not take it back out.
Watch for
- The scombroid mechanism, not the species itself, is what makes mackerel risky.Histidine in the dark lateral muscle becomes histamine once the fish is held above about 4C, and toxic levels can build in well under a day off ice. Buying it frozen at sea or eating it the day it was landed does more for you than any cooking method.
- Cooking does not undo it.Histamine survives grilling, hot smoking, curing, canning and freezing. If a fillet built histamine on the boat or on a warm counter, the histamine is still there on the plate.
- Scombroid poisoning looks exactly like an allergic reaction: flushing across the face and upper body, a throbbing headache, palpitations, hives, cramping and a peppery or metallic burn in the mouth, usually within an hour.It is a chemical dose, not an immune response, and it will happen to anyone who eats a bad enough fillet.
- Smoked and tinned mackerel are the versions histamine restriction protocols exclude, because warm smokehouse holding, brining and long shelf storage all favour amine build up even when the finished product is perfectly safe from a food poisoning point of view.
- Tyramine grades borderline too, and it climbs on the same clock as histamine.Worth tracking if you take an MAOI or keep a migraine diary. Separately, king mackerel is the one variety on the FDA and EPA list to avoid for mercury, while Atlantic mackerel sits in the lowest mercury tier.
