What to know about olive tapenade
Olive tapenade looks like a cured-food problem and mostly is not one. Our grading puts it high on FODMAPs and specifically on fructans, which in a tapenade means the garlic, not the olives. Histamine itself only rates moderate, with moderate grades alongside it for histamine liberation, tyramine and free glutamate, so the brine-and-cure side of the jar is a low background hum rather than the headline. That combination explains a common complaint: people who eat plain olives happily still bloat, cramp or gurgle an hour after tapenade on toast. It is worth knowing what tapenade is clean on too, because the list is long. It grades clean for gluten, lactose, dairy protein, oxalate, nickel, nitrites, polyols and nightshade, which makes it usable on a lot of restrictive plans as long as fructans are not your issue. The one variable the grades cannot see is the recipe. Traditional tapenade includes anchovy, and we grade anchovy very high for histamine and high for tyramine, so an anchovy version is a genuinely different food from the vegan jars this grading reflects.
