Mustard greens are one of the cleaner cooking greens once you look at the trigger columns: low FODMAP, low histamine, no free glutamate, nothing on the gluten or nightshade side. The peppery bite comes from glucosinolates, which are a flavour chemistry story rather than a graded sensitivity. The only marks against the leaf are borderline ones, moderate salicylate, moderate oxalate and moderate nickel, and boiling and draining pulls all three down.
