Hemp seed oil is the cold-pressed, deep green, faintly grassy oil you get from hulled hemp seed, and once you know it is a food oil rather than a cannabinoid product its story becomes almost entirely a kitchen one. The trigger card is clean: A for histamine, histamine liberation, salicylates, oxalate, nickel, sulfites, glutamates, gluten, lactose and all five FODMAP subgroups. The interesting comparison is not against other oils but against the seed it came from. Hemp hearts are graded D for nickel, B for FODMAPs and B for histamine liberation, while the oil is A on all three, because pressing separates the fat from the protein, fibre and minerals that carry those loads. The trade-off is stability. This is one of the most heat-fragile oils in a normal kitchen, and treating it like a frying oil ruins both the flavour and the fat.

Do not cook with it. Hemp seed oil is high in polyunsaturated fat, has a low smoke point, and turns bitter and acrid well before a pan gets to frying temperature.
